The evisceration spoon is useful to remove the internal organs of both birds and web-footed birds (ducks and geese). It is composed of two-ended spoons of different sizes: the bigger one is suitable for removing the entrails, the smaller one is suitable for removing liver, lung and heart.
Clean the evisceration spoon after each use.

Remove the entrails using the bigger spoon, in the direction indicated by the arrow.
